While the wine has been enjoyed in Italy for centuries, Italian immigrants in America paired it with lightly floured chicken cutlets, mushrooms, butter, and fresh herbs to create one of the country’s most beloved restaurant dishes.

The result is a silky, flavorful sauce that perfectly complements tender chicken.

Why Marsala Wine Matters

Not all cooking wines are created equal.

Authentic Marsala wine adds layers of caramel, toasted nuts, dried fruit, and subtle sweetness that cannot be duplicated with inexpensive “cooking wine.” A good dry Marsala creates a balanced sauce that is rich without being overly sweet.

Building the Sauce

Once the chicken is golden brown, the mushrooms are sautéed until lightly caramelized. Marsala wine is added to deglaze the pan, capturing every flavorful browned bit.

Nocella’s Chicken Marsala Recipe

Ingredients

2 boneless, skinless chicken breasts, butterflied and pounded thin
Salt and freshly ground black pepper
½ cup all-purpose flour
2 tablespoons olive oil
3 tablespoons unsalted butter, divided
8 ounces cremini mushrooms, sliced
2 cloves garlic, minced
¾ cup dry Marsala wine
¾ cup chicken stock
1 teaspoon fresh thyme leaves (optional)
2 tablespoons chopped Italian parsley

Instructions

Season the chicken with salt and pepper and lightly dredge both sides in flour. Shake off the excess.
Heat the olive oil and 1 tablespoon butter in a large skillet over medium-high heat.
Cook the chicken for about 3–4 minutes per side until golden brown. Remove and keep warm.
Add the remaining butter and mushrooms. Cook until the mushrooms are browned, then stir in the garlic for about 30 seconds.
Pour in the Marsala wine and scrape up the browned bits from the bottom of the pan. Simmer for 2–3 minutes.
Add the chicken stock and thyme. Reduce the sauce by about one-third until slightly thickened.
Return the chicken to the skillet and simmer for another 2–3 minutes, spooning the sauce over the chicken.
Finish with fresh parsley and serve immediately over pasta or alongside roasted potatoes.

Chef’s Tip

For an even richer flavor, finish the sauce with a small pat of cold butter just before serving. It creates a beautiful shine and silky texture without making the sauce heavy.
